Production area: from the terraced vineyards of Tenuta Novare in Valpolicella Classica.
Soils: marno-calcareous, with clayey deposits.
Grapes: 70% Corvina Veronese, 20% Corvinone, 10% Rondinella.
Production method: this wine is obtained from the second “ripasso” fermentation.
In March, the fresh and young vintage Valpolicella is put to referment on the still slightly sweet pomace of Amarone Classico.
Aging in 75 hl French oak barrels for 12 months, plus a further year in concrete tanks.
Finally, at least six months in the bottle.
Style: Medium-bodied wine, with gentle spicy notes of vanilla and chocolate accompanied by typical notes of cherry, black cherry and white pepper.
On the palate, the wine is characterized by easy drinkability, typical of Valpolicella, and, at the same time, by a silky tannic structure and a more intense and prolonged aromatic persistence, typical of Amarone. The finish is fresh, soft and savory.
Classic style wine, elegant, balanced, harmonious.
